Meatless Monday

I asked for a vegetarian cookbook for my birthday and Jeff got me College Vegetarian Cooking. So far, I have only tried 1 recipe from the book but we have already had this dish twice. Jeff and I love it but the girls and Lauchy - not so much. But I will still make it again.

I would like to try and have at least one vegetarian meal a week if possible. Our grocery bills are quite high and I think it is partly because we eat a lot of chicken. From what I have read it seems that vegetarian eating is also better for the environment.

Here is our first recipe:

Vegetable Pot Pie

Ingredients:
3 potatoes
2 carrots
1 small onion
8 ounces mushrooms
2 cups water
1 vegetable bouillon cube
1 cup frozen peas
1/4 cup flour
1/2 teaspoon poultry seasoning
1/2 cup milk
Salt and pepper
1 sheet frozen puff pastry, thawed

Method:
Preheat the oven to 400 degrees F.

Peel the potatoes and cut into 1/2-inch cubes. Peel the carrots and cut into 1/4-inch cubes. Peel the onion and cut into 1/2-inch pieces. Cut the ends off the mushroom stems, discard, and cut the mushrooms in half.

Place the water, bouillon cube, potatoes, carrots, onion, and mushrooms in a saucepan and bring to a boil. Cover and simmer over medium-low heat for 10-12 minutes, or until the potatoes are tender. Add the peas to the pan. In a bowl, combine the flour, poultry seasoning, and milk and stir until smooth. Slowly add the milk mixture to the pan, stirring constantly. Season with salt and pepper and cook over medium heat for 5 minutes, or until the sauce thickens.

Pour the mixture into a 2-quart casserole dish and top with the sheet of puff pastry. Press the pastry down firmly around the outside edge of the dish and cut 4 small slits in the top. Bake for 30 to 35 minutes, or until the puff pastry is golden brown. Serve immediately.

Serves 4.

Voila!

Note: This is only the 2nd time I have used puff pastry but I think the first time it puffed out more. I was planning on making this a few nights ago so thawed the pastry then. I then put the pastry in the fridge until today and it seemed to have some "chunky" bits in it when I rolled it out. It still tasted delicious!

    I have resolved to making 52 recipes in 52 weeks.

    It's always great fun and more so to try others tried and true recipes.

  3. If you ask me.. I think that everyone should eat only vegetarian meals everyday. Its just my opinion though :)

    Good job on making the choice to go veggie once a week:) Now you just have to adjust your taste buds to enjoy the taste of veggie chicken.
